Pan roasted grouper with a jerk spiced salsa and sweet potato puree
Fish:
4 fillets grouper
2 tbsp butter
1 tbsp chopped fresh parsley
Sweet Potatoes:
2 large sweet potatoes
2 tbsp butter
Salsa:
1 cup diced pineapple
1 cup diced papaya
1/2 cup diced red bell pepper
1/2 cup mango
2 tbsp chopped fresh cilantro
1 ea diced jalapeno (optional)
Jerk Spice:
2 T brown sugar
1 T garlic powder
1 T onion powder
1/2 T paprika
2 tsp salt
1 tsp black pepper
1 tsp red pepper flake
1/2 tsp cinnamon
1/2 tsp cumin
1/2 tsp allspice
1/2 tsp nutmeg
