Recipes:
Chicken Curry
2 boneless chicken breasts – cut in cubes
14 oz tin of diced tomatoes
14 oz tin of crushed tomatoes
1 green pepper – diced
2 diced tomatoes (fresh)
2 onions (diced)
1/2 bunch cilantro
1 teaspoon each: crushed garlic and ground ginger (fresh)
1 tin coconut milk
2 teaspoons of soy sauce
1 cup frozen carrots and peas
2 diced potatoes
1 tin green chilis or 1 fresh jalapeño
(can add banana peppers for color)
Black pepper
Saute chicken and potatoes in a little cooking oil until browned. Add the onions and saute until soft. Add the mixed carrots and peas and continue to cook for a few minutes. Add the garlic and the ginger and continue cooking. Add black pepper to taste. Add the diced tomatoes, curry powder and cook for three to five minutes stirring continuously. Add soy sauce and continue to stir and cook. Add crushed tomatoes and continue to cook. Add coconut milk and chilis and cook a few more minutes. Add all but a garnish of cilantro.
Cover and cook three minutes. Test for salt and add more soy sauce as needed.
Top with cilantro garnish.
Serve with chapati or rice.
Serves four to six people
Chapati (Ugandan Bread) –
4 cups all-purpose flour
1 cup warm water
Salt
1/2 cup cooking oil
In a large bowl add the flour, mix in oil, salt and oil. Mix with your hands. Add more water and/or flour as necessary. The dough should be soft and moist. It will be ready to roll out when it stops sticking to your fingers.
On a flat surface or cutting board, roll out a handful of dough on. The recipe should make about six chapati. Keep rolling and turning over until it is 1/4' (as thin as you can get it)
Heat a skillet and place the chapati in skillet (it is not necessary to add more oil). Roast a few minutes until it is browned. Flip the chapati, and butter it like you would toast. Flip again and butter the second side.
